today, i was just surfingthe net, and as most of us do when we surf the net, i typed in my name and wondered what the WWW knows about me (try this... it's a really good ego booster too when you are down hehehe)...this blog entry will be a summary of what has happened to me the past 3 years according to the world wide web and according to the CHEFangga!

1. RAYA....
my last blog entry was a day after my little raya's birth. it has been
almost 3 years since our little angel was born ..she is a little lady now,very intelligent,witty,a little stunner (looks like daddy..but walks, talks, pouts, and has the sweets and smarts of mommy) and most of the time this little one outsmarts the CHEFangga! she surely knows how to take me for a ride!

2.TEACHER TEACHER!
yup ! you heard it right folks the CHEFangga! is now a teacher! a brief background.... for people who know my academic past they would ROWFL! and will be pissing their pants in laughter when they hear that one of the most notorious students of colegio san agustin and les roches has become the person he hated most of his early adolescent and adult life...a teacher...not to offend the teachers of the world..i think they are awesome people! i just didn't like how they shot me down every time i blabbered or slept in class, or tell on me off when i get the worst grades ever marked on a report card...(i won't mention how low it was...ok ok... it was a 64 hehehe .... but i got straight 90's after that.my computer teacher told my crush back then to tell me to study harder ....she kinda led me on too.. so i bit the bait and studied harder:) ..ok back to the story...i was so bored in school back then NOTE: (they say geniuses easily get bored..wink :) i would be absent on an average of 10-15 days a month thats at least a day a week..my favorite cut days were wednesday (day where new movies come out) and mondays(go figure!). once, my biology teacher found me in class on a wednesday and asked me in front of the class why i was in school on a wednesday."aren't there good movies out today?"....i better keep my mouth shut now my parents and my students might read this blog and lose all respect for me hehe.. anyway, yes so i am a teacher now. i am a chef instructor for the center for culinary arts CCA. i teach knife skills, soups-stocks and sauces, cooking methods, filipino cookery, european cookery, lifestyle classes, and pro chef. i have been an instructor for more than 2 years now... and you know what? ..(god please don't let the lightning hit me or make the earth shake)...i love it! i love teaching... i really enjoy giving out real life lessons and culinary tips to dazed and overwhelmed new students, scream and yell at them until their knees shake in the middle of practical exam (just kidding!), and share the love affair i have with food . hopefully these guys embrace the knowledge i gained through my demented mentors and inspirations and the relive passion i have for food and use it in their culinary careers. p.s. thanks to all my teachers! you guys rock!
3. WHEN A DOOR CLOSES.... I OPEN A CAN OF WHOOPED ASS!!!
a lot has happened indeed the past few years... some not so good, some come unexpectedly.... all i know the GUY upstairs has really been good to me....and when HE gives you chances you should grab them and give it a good whirl, whip, and whoop!

maybe you have heard by now, we closed PONZO's in magallanes due to various reasons...nope, it was not losing money and people still loved the food we made...PONZO'S just needed a new home a bigger brighter home and a biggermarket...so please stay still until PONZO's return.....

have you heard of this pinoy restaurant in shaw blvd. and burgos circle called 1521? a no frills down to earth filipino and filipino inspired restaurant that has quirky named food items. do you know the place? did it give you good memories? an empty pocket perhaps? a happy tummy at least? i hope you did! i hope you enjoyed our food and your dining experience!...if you did.. please continue reading ..if you did not.. it was nice meeting you... you can go back to your facebooking :) hehehe.... did you know the CHEFangga was the one who came up with the food and menu of 1521? yessir! the CHEFangga was the consultant for 1521 and boy did we whip up a storm! the advertising prowess and love for food by tita tanke and nica made my life easier... and the food became a joy to create for them. thank you for supporting 1521 and making 1521's dishes as memorable as they are now....
rue bourbon- burgos circle fort bonifacio , taguig city

rue bourbon was another project by the CHEFangga back in 2009... i was asked by my then student alex cantor to help him out with his bar restaurant concept in fort bonifacio taguig...i gladly obliged ...i liked the concept, i also wanted to help my student out, and really i missed the restaurant and bar scene since my 100 SQM days(our resto bar back in the late 90's that rocked pearl drive ortigas :) those were good and young times)....back at rue bourbon ...with the help of chef marj domingo and the CHEFangga, we made magic in alex's very small kitchen in the bonifacio branch ....working and researching after class...and finally coming up with a killer rue bourbon menu...today, a lot has been added to the menu by alex...these are just clear signs that alex has found his spot in the kitchen:).. bon chance rue bourbon! and keep it flowing!

one morning on september 2009 i got a call from an old friend bryan tiu (Ifoods) the MAN AND BRAINS behind the following brands: T-BOY, TOKYO CAFE, PERI-PERI-GRILL,KOMBINI JAPANESE GROCERY,STACKERS, AND KOGI BULGGOGI.... it's been a while since i last heard from bryan . last we spoke and saw each other was back in 2008 i think it was about a project we were supposed to do internationally with my uncle...the project was shelved, and i thought i would never hear from bryan again....but i did hehe...he asked the CHEFangga to help him out with his italian restaurant project a few weeks later we were food tasting! i also asked help from my good friend and co chef lutong makoy...weeks of research ,product testing, and a lot of beer bottles after... we finally came up and finished parmi's menu ... a homey,easy ,traditional,just good italian food.. please check parmigiano out it's at the second floor of the newport mall resorts world manila pasaycity... bon appetito!
stackers-brekkies menu

the CHEFangga also dipped his fingers on the new breakfast menu of stackers burger cafe...the boss mr. bryan tiu asked help for stackers all-day breakfast menu...i never can say no to my good fried and boss mr. tiu and number two i love breakfast food.... i love making it i love eating it! i have fond memories of my childhood with my lolo domeng, early at the breakfast table on a chilly daly city sunday morning....first we would start off with fruits, cereals, and milk(FRUIT LOOPS only please) ... followed by a hearty plate of fried rice, 2 eggs sunny and runny , and sauteed corned beef with potatoes, lots of onions, and a dollop of ketchup on top !..then we finish things off with buttered toast and jam, cold chocolate milk , and orange juice! truly a breakfast of champions and a notch or two added on my belt!!!.... if you want good burgers and a good memorable breakfast ... try stackers! yummo!!!!

luneta hotel

the CHEFangga has been recently tapped by the people who own this beautiful old french inspired building along t.m. kalaw and roxas boulevard named the luneta hotel. the building was built in 1908 with french inspired architecture by a renowned spanish architect. the luneta hotel was named as one of the premier hotels of its time....fires,wars, and finally martial law closed down the hotel..until recently when the illustrious lacson family bought,breathed new life, and spent more than a shiny penny to restore and rebuild this once icon of manila. the 25 room boutique hotel is almost finished. a french inspired cafe at the lobby and a lacson family inspired restaurant and banquet hall has been keeping the CHEFangga and lutong makoy busy, sleepless, and sleepy the past few months heheh... we are just so excited for this project, and we hope that our food embraces and compliments the very colorful past and the bright future of this soon to be completed work of art.

this project and concept has been playing in my mind for so long now. if i'm not mistaken almost 11 years now....i really loved the taco trucks of l.a. i remember my chong irwin and chong ron taking me to a burrito stand in inglewood at 2am..man, tell you, it was the only pleasant sight in that part of town at that time of night ..aside from the... hehe i won't give in ;)... i also always had dreams of myself chasing those ice cream trucks of old american movies ..especially the movies of cheech and chong :)...in a few weeks time my dreams are soon gong to roll.... with the help and generosity of a very good friends.we even found the exact same truck being used (called lunch trucks) for these type of mobile restaurants. our menu is solid (keeping fingers crossed), and hopefully our market responds well to this concept :) ....we'll keep you posted when our maiden voyage will be...folow us on facebook ...type in streetmeat..please like and comment and like ! thanks!
there are more projects coming up ... but they are still at the very early stages of development(heheh this sounds like a top secret project by the pentagon).... to give you a teaser....one will be called "balustre", one will be called "O bistro" and the other one "wwe"..... so please pray with me to the high heavens that all of these and more come to fruitition :) ....
well folks these are the things that happened with the CHEFannga while i was away from blogging....i know nobody really missed me and besides, as i said in my very first blog,no one really reads blogs especially mine anyway!..wink wink...then again i just want to thank everyone who helped me these past 3 years, and to everyone who has made it a very eventful ride so far....first of all to the big guy up there...thank you so much for all the blessings you have showered me.. to my loving and one and only, my bebeng , for always being there for me especially when i need editing in my kidergarten-like blogging technique heheh... you are the battery inside this energizer bunny...all of this is for you ..for us:) i love you...to my other bebeng my little one, for giving me enough pressure to send you to an exclusive all girls school... these and more are all for you and your damned tuition fee!!!daddy i mean the CHEFangga loves you to bits... to my family who has been the CHEFangga's critique and cheerleader with all my projects and endeavors..thanks and i love you all.. to all my friends and partners in crime you know who you are...(you guys were mentioned more than once on this blog!) special thanks to hans cris and khei also.... thank you for rocking and rolling hard with the CHEFangga! .........here is to more food, life, and love......sige na nga pati na more money! YEAAAAHHHHHH!!!!
